Orecchiette by hand.

Orecchiette
1C Semolina
2 1/4C 00 Flour
1C warm water
Salt

Sift semolina, 00 & salt into a mound
Make a well in the center, pour water into well
Combine water and flour to create a smooth elastic dough ball.
Wrap dough in plastic and let rest for 1 hour
Divide dough, roll out 1/2″ ropes, cut into 1/4″ pieces

Fast Food (in another part of the world)

Falafel pita’s are definatley one of my favorite vegetarian entrees. Who can resist that stuffed pita?
Step 1 – Make some grilled pita’s
Step 2 – Make some falafel
Step 3 – Put it all together and enjoy*
